Responsibilities
Tasks
- Prepare and cook complete meals and individual authentic Indian dishes
- Prepare and cook specialty South Indian, East Indian, West Indian and Halal dishes to traditional standards
- Prepare dishes for customers with food allergies, intolerances and dietary restrictions
- Determine the size of food portions and food costs
- Plan menus and estimate food requirements
- Requisition food and kitchen supplies, and monitor and order supplies
- Schedule and supervise kitchen helpers
- Oversee kitchen operations
- Maintain inventory and records of food, supplies and equipment
- Train kitchen helpers in the preparation, cooking and safe handling of food
Additional information
Specialized skills required
- Hands-on experience cooking authentic regional Indian cuisine.
- Expertise in tandoor / clay-oven cooking and traditional clay-oven breads.
- Skill in traditional spice blending and masala preparation.
- Knowledge of Halal preparation and handling standards.
- Food Safe certification an asset.
